What to do with Potatoes
Hi everyone! I've been experimenting with (and of all thing) potatoes. I've always been kind of "stand-offish" when it comes to potatoes, especially russet white potatoes; mostly because I'm guilty of trying to avoid as much starch (especially white starch) as possible, but the potato has a high water content as well, so I'm done with the "stay away from the starchy potato" phobia.
The potato is the most used and favorite vegetable of all times. There are so many uses for them; they can be baked, broiled, fried, micro waved, roasted, mashed, steamed and much more. This weekend after my workout, I wanted a soup; not a heavy based soup, and not a watered down soup either, but a good ol, stocky soup that could be my comfy food for the day. So sitting still, meditating and listening, I heard "why not make the potato the base for your soup". Then my mind went on a field trip!
2 large Russet potato-baked, broken (place 1 potato in blender) Mash other potato and set aside
8 oz vegetable stock
1 teaspoon garlic
1/4 cup cilantro cleaned and chopped
1/2 cup chopped carrots
Salt and pepper to your liking
1 cup steamed broccoli pieces or chopped
Combine all ingredients in blender (except mashed potato and broccoli). When combined, pour in pot, and simmer. Once warmed to your liking, stir in the mashed potatoes and the steamed broccoli. Enjoy!

This hearty potato based soup is so good. It's easy, and goes well with a salad or sandwich.
