Cheesy Mac N "NO" Cheese

I'm a carb queen. I'll always order macaroni and cheese, but I don't want it to be fancy. I want it to be as close to Kraft Services as it can possibly get! - Drew Barrymore 

This mac and "NO" cheese is the best I've had.  I have had vegan mac n cheese at vegetarian restaurants, and it's good, but the problem I've had with it is that it's always sort of bland.  I found this sauce at The Healthy Hoff.  I adapted it by adding turmeric, garlic powder, and black pepper for a kick, added some whole grain elbow noodles, and whala! This is so good, and creamy.  I think even Drew would approve.


Cheesy Mac N "NO" Cheese

12 oz Nasoya organic silken tofu
I Red Pepper
1/2 Cup of Nutritional Yeast
2 Tablespoons Yellow Mustard
1 Teaspoon Sea Salt
2 Teaspoons Turmeric
1 Teaspoon Black Pepper

Whole Wheat Elbow Macaroni cooked according to packaged directions/desired tenderness, drained and set aside.

Place all cheese sauce ingredients in blender and blend until all ingredients are well blended in and creamy. Once blended, put in pot on stove, heat and add noodles. Sauce will thicken.
