Some comfort dishes

Hi people.  It's cold outside and I've been in the kitchen making comfort food for the weather.

A nice breakfast is Tofu, Spinach and Bacon scramble

Tofu Scramble
2 tbsp olive oil
3 - 4 strips Lightlife mock bacon
3 cloves garlic, minced
1 cup spinach
1 container firm or extra-firm tofu, pressed and mashed
1/4 tsp turmeric
1/2 liquid smoke
1/2 tsp nutritional yeast
salt and pepper to taste

Cook the vegetarian "bacon" in olive oil for a few minutes, tear into bite-sized pieces. 
Return bacon to the pan along with the mashed tofu, spinach, turmeric and liquid smoke, stirring to combine. Sautee for a 5 to 7 minutes, stirring frequently.  Yummy! and the nutritional yeast gives it a bit of cheesy taste to me.

A couple of fish & pasta dishes: Shrimp Paella and Grilled Tilapia with Penne


This is the Zatarain's box mixture, and I added shrimp, spinach, Lightlife Smart Sausages-Italian Style, and vegetarian crumbles.  Follow directions on box, or if you're wanting to really tap into your Spanish chef side, follow this recipe Zatarain's Paella recipe


Season the Tilapia with any jar blackened seasoning mix (or use the recipe below to make your own seasoning), grill the fish in 2 tablespoons of olive oil on low, (I cook on a gas stove).  When done add on top of penne pasta sprinkled with Italian seasonings.

Blackening season mix
1/2 tablespoons paprika
tablespoon garlic powder
tablespoon onion powder
tablespoon ground dried thyme
teaspoon ground black pepper
teaspoon cayenne pepper
