A Mean Meatloaf

So this past week, one of the influences for this blog sent me a recipe that she found on the internet for meatloaf.  I took it home with the intentions of making it, but misplaced it.  It was a great recipe, and actually quite close to my mom's recipe (minus the meat).  This one had rice and beans in it. I wish I could find it, so i could give a shout out to the person who's recipe it was; it was written really well, with easy to follow instructions. 

Because I misplaced it, I took my skills to the kitchen, and flipped my own meatloaf recipe and this is what the finished product looked like:

a vegetarian meatloaf 
Recipe
1 can Bush chili beans, mild sauce
1 cup oatmeal (I used ground oatmeal)
1/4 cup beaters OR 1 c cooked rice (I use egg beaters to hold together)
1 cup seitan (ground)
1 cup diced tomatoes (zesty mild, green chilies)
1/2 cup onions
2 Tbls liquid smoke
1/2 c bar b q sauce
1/2 c bar b q sauce (reserve)
salt & pepper to taste

Mix all ingredients together (except 1/2 c bar b q sauce) well, put in loaf pan sprayed with cooking spray.  Bake in oven for 50 minutes on 325°F.  Pull out of oven, pour reserve bar b q sauce on top, and bake for 10 extra minutes, or until desired texture is achieved.

As Ms. La Petite Pescetarian's co-worker, designated taste tester, and fellow Pescetarian (there is not one thing I would say no to that she makes, she is that good in the kitchen), I tried her Mean Meatloaf and it was absolutely delish. Maybe one day I will have the time to make this dish or give Ms. La Petite my lunch money LOL. Seriously though, great job on flipping the recipe, I loved it!
