Been in the mood for...
The last several days my food cravings have gone haywire. I went from wanting crab to a nice big tasty salad, to a BLT (which you know by now I don't eat bacon, but nonetheless the craving was still there) to something Asian. So, starting Saturday night all the way up to tonight for dinner, I've had all three, pescatarian-vegetarian style!
watercress and crab salad
This craving (crab) lingered longer than normal. So, I mixed together some watercress, tomatoes, celery, green onions, basil and lump crab, then drizzled with homemade vinaigrette dressing. Loved it. Craving taken of!
tempeh blt on wheat bread
This one I had for dinner last night, and I can't lie, I was wanting to lick my fingers afterwards! LOL. I used a little vegenaise sandwich spread, a tomato, spinach instead of lettuce and some tempeh bacon (smoky maple flavored), had some fruit on the side with a small spinach salad. I'm excited to see what else I can use this bacon for! Maybe carbonara? We shall see! stay tuned.
cabbage and seitan filled egg rolls
And for my Asian itch, I made egg rolls filled with cabbage and seitan. Nasoya has a really easy recipe on the back of their wrappers that I modified for my taste, and tada. I had leftover rice in the fridge, so I added some mushrooms and sauteed in a little sesame oil. Kicked that craving.
